Demeyere Industry pans are heavy, fully clad stainless steel pans with welded handles that heat extremely evenly. They differ from All-clad in that they have a rolled lip to reduce drips when pouring and their lack of rivets on the handles keeps food from being trapped.
They are stainless steel and not non-stick, making it easier to develop a fond when pan searing. They are not coated, but they use with a subtractive process that removes iron from the cooking surface to increase the ratio of chrome to iron. This means they are still uncoated stainless, but they clean and release food a little easier. Here’s a very in-depth review.
I’ve been slowly replacing my old college cookware with Demeyere products as they go on sale. I know most people aren’t in the market for these pans, but hopefully this will be useful to those who are.
